    一道简单的番茄炒鸡蛋,从小吃到大也不会腻,酸酸甜甜很开胃!别小看这道料理,也包含着很多烹饪原理,炒鸡蛋时要不要提前加盐,蛋液里要不要加水?快学起来吧!

    Step 1

    番茄割十字后放入沸水去皮,把去皮了的番茄切块。Cross cut the top of tomatoes, blanch in boiling water, peel off the skin and cut into small chunks.

    Step 2

    锅内放入食油,蒜末炒香。Heat some oil in wok, sauté chopped garlic till fragrant.

    Step 3

    放入番茄块翻炒,加点水、糖、盐调味和勾芡。Add in tomato and water, cook on medium heat until tomato is a little mushy, season with some salt, sugar and corn starch, set aside.

    Step 4

    加点食油,把蛋液倒入。稍微翻炒蛋液,蛋液还未完全凝固前加入已炒好的番茄。Heat oil in a wok, pour in eggs and stir it continuously, until it looks like a scrambled egg, return the tomatoes to the pan and quickly combine it with the scrambled eggs by stirring gently.

    Step 5

    以胡椒粉和盐调味。Season with some pepper and salt.

    Step 6

    熄火了 再放入青葱,快速翻炒后即可上菜。Off heat and sprinkle the green onion over, serve hot.
